Paul Saltman papers, 1933-1999.

Reprints and manuscripts of scientific and popular articles, correspondence, texts and notes of speeches and lectures, and various subject files documenting the research and administrative career of Paul Saltman, primarily at the University of California, San Diego. The subject files include documentation of Saltman's consulting role to major food corporations such as Procter and Gamble, M and M Mars Co., Carnation Co., and Sabatasso Foods, as well as research and teaching materials. One of the consulting files pertains to the basketball player Bill Walton and his diet during the years 1973-1980.

Biochemist and nutritionist born in 1928 and educated at the California Institute of Technology (B.S. in 1949, Ph. D. in 1953). Saltman taught biochemistry at the University of Southern California from 1953 to 1967, when he accepted a position as Provost of UCSD's Revelle College. In 1972, Saltman was appointed UCSD's Vice Chancellor for Academic Affairs. He resigned from that position in 1980, returning to full-time teaching and research at UCSD.
